Increasing scientific evidence suggests that the majority of diseases including cancer are driven by oxidative stress and inflammation, attributed to environmental factors. These factors either drive genetic mutations or epigenetically modify expression of key regulatory genes. These changes can occur as early as gestational fetal development, and major questions remain as to how dietary/nutritional phytochemical factors biochemically interact with such genetic and epigenetic events. The final section of the book explores the latest developments on the interactions of dietary phytochemicals through epigenetics and the management of chronic inflammation with nutritional phytochemicals.

Secondo l'OMS il concetto di salute non è più inteso come assenza di malattia, ma va reinterpretato come "wellbeing", cioè "completo benessere fisico, psichico e sociale". Questa nuova concezione ha contribuito a ridefinire l'alimentazione non più come apporto di soli nutrienti, ma anche di elementi nutrizionali che possono contribuire al "wellbeing". È su questa base che si è diffuso il consumo degli alimenti funzionali. Ma cosa sono? Comuni alimenti, integratori alimentari o farmaci? Oggi, il mercato degli alimenti funzionali si è così esteso, attraverso la ricerca scientifica e tecnologica, che la loro classificazione e la loro definizione rimangono tuttora problemi irrisolti.
